Cape Verdean Rice and Beans: Jagacida

What's the big idea?

This is a fairly typical accompaniement to a main course of fried fish or barbecued meat. The exact ingredients list will vary depending on availability of other vegetables which may be added, but this is a fairly typical "base" recipe.

Shopping List

Here's the list of what you need:

  • 1 medium onion, finely chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper
  • 8oz rice
  • 1 teaspoon paprika
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped
  • 1 x 400g can of lima or kidney beans, rinsed and drained

What To Do

  • Heat the oil in a large saucepan and fry the onions until golden brown
  • Add 1 litre of water to and season well
  • Bring to the boil
  • Add the rice, paprika, bay leaves and parsley
  • Lower the heat, add the beans, cover and simmer for 25 minutes, adding more water if needed
  • Remove from the heat, drain well. Replace the lid on the pan and leave to stand for 5 minutes before serving
