Ghanaian Braised Chicken with Chillies

What's the big idea?

Very simple straightforward chicken dish - serve with mashed potato, mashed sweet potato or rice to soak up the sauce.

Shopping List

Here's the list of what you need:

  • 1 large onion, sliced into rings
  • 1 tablespoon peanut or vegetable oil
  • 1oz butter
  • 4 chicken drumsticks
  • 4 chicken thighs
  • 200ml chicken stock
  • ½ teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 fresh green chillies, finely chopped (deseeded if you want to reduce the heat)
  • 4 medium tomatoes, quartered
  • Handful of baby corn

What To Do

  • Heat the oil and butter in a large saucepan or wok
  • Fry the onion rings until just beginning to brown, and then add the chicken drumsticks and thighs. Fry until lightly browned all over
  • Add the chicken stock, nutmeg, salt, pepper, green chillies, tomatoes and baby corn to the pan
  • Reduce the heat, cover and simmer until the chicken is cooked - 30-45 minutes, depending on the size of the chicken pieces
