Beef & Spinach Stew

What's the big idea?

Does exactly what it says on the tin - serve with mashed potato, mashed sweet potato or rice to soak up the sauce. Could be adapted for the slow cooker if you prefer...

Shopping List

Here's the list of what you need:

  • 2 tablespoons of peanut or vegetable oil
  • 3-4 medium onions, finely chopped
  • 1lb (500g) stewing beef, cubed
  • 2 green peppers, chopped
  • 1 teaspoon minced fresh ginger
  • 2 fresh green chillies, finely chopped (deseeded if you want to reduce the heat)
  • 1 x 400g tin of chopped tomatoes
  • ¼ teaspoon brown sugar
  • ¼ teaspoon salt
  • 12oz chopped fresh spinach

What To Do

  • Heat the oil in a large saucepan or wok
  • Add the onions, beef, green peppers, ginger and chillies to the pan
  • Fry for 5 minutes until the meat is browned on all sides
  • Add the tomatoes, brown sugar and salt
  • Reduce the heat, cover and simmer for 2 hours
  • Check regularly and add water if it becomes too dry
  • Add the spinach. Continue cooking for a further 30 minutes, stirring occasionally
