Simple Fried Fish

What's the big idea?

Very simple, straightforward and easy to prepare dish. Serve with mashed potato, mashed sweet potato or rice, and steamed spinach.

Shopping List

Here's the list of what you need:

  • 4 firm fish fillets
  • 1 tablespoon minced fresh ginger
  • 2 fresh red chillies, finely chopped (deseeded if you want to reduce the heat)
  • 1 teaspoon salt
  • 2 tablespoons peanut or vegetable oil

What To Do

  • Mix together the chillies, ginger and salt
  • Make deep cuts across the fish and fill these with the chilli/ginger paste
  • You can leave it to marinade for an hour or two at this stage if you like, but it is not essential
  • Heat the oil in a frying pan
  • Fry the fish until browned all over, but take care not to over-cook
