Ivorian Fried Smoked Fish with Green Beans

What's the big idea?

A simple healthy meal of fried fish with tomatoes and green beans. Serve with rice.

Shopping List

Here's the list of what you need:

  • 1lb smoked mackerel
  • Salt
  • 2 tablespoons ginger, peeled and finely grated
  • 4 tablespoons vegetable or peanut oil
  • 2 medium onions, finely chopped
  • 2 cloves garlic, minced
  • 1 x 400g tin chopped tomatoes
  • 1 tablespoon tomato purée, blended with 2 tablespoons warm water
  • 1 fresh red chilli, very finely chopped
  • ½lb green beans, chopped

What To Do

  • Season the fish with salt and ginger. Heat the oil in a heavy-based frying pan or wok, and fry the fish until crisp and brown
  • Remove the fish from the pan, drain, set aside, and keep warm
  • In the remaining hot oil, fry the onions and garlic for 5 minutes. Add the remaining ingredients
  • Return the fish to the pan, cover, and simmer for 10 to 15 minutes
