Moroccan Chick Pea Soup

What's the big idea?

Deliciously warming and tasty soup. Great served with pitta breads at the start of a meal. And it's really easy to cook too!

Shopping List

Here's the list of what you need:

  • 2 tablespoons olive oil
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 2-3 teaspoons ground cumin
  • 400g tin chopped tomatoes
  • 400g tin of chick peas, drained
  • 600ml vegetable stock
  • 1-2 tablespoons lemon juice
  • 2 tablespoons fresh coriander, chopped
  • Salt and pepper, to taste

What To Do

  • Heat the oil in a large saucepan and add the celery, onion and a little salt and pepper
  • Cover and cook over a low heat for about 10 minutes
  • Add the cumin and cook for another minute, then add the tomatoes, chick peas and the stock
  • Bring to the boil, reduce the heat and simmer for 5 minutes
  • Add the lemon juice and coriander. Season to taste
