Barbecue Fish Parcels

What's the big idea?

Traditional South African dish. Originally, the fish would have been cooked over an open fire and wrapped in banana leaves - if you can get hold of some, go for it! You'll need to use a skewer or something similar to hold the parcels together. But we find it works well simply wrapping the fish in foil and cooking it on a barbecue. Serve with rice and a green salad.

Shopping List

Here's the list of what you need:

  • 4 fish fillets of your choice - nothing too strongly flavoured
  • 2 tablespoons dry sherry
  • 1 small red chilli, finely chopped
  • Small bunch of fresh coriander, finely chopped
  • 1 teaspoon finely chopped fresh ginger
  • 3-4 tablespoons olive oil
  • 3-4 tablespoons lime juice
  • Salt and black pepper

What To Do

  • Place the fish fillets in a suitable non-metallic bowl
  • Mix together all the other ingredients and pour over the fish
  • Cover and leave to marinate in the fridge for 2-3 hours
  • Wrap each fish fillet individually in foil (or banana leaves) with a little of the marinade
  • Bake over a hot barbecue for 10 minutes, turning once
  • Simple!
