Tunisian Spicy Grilled Chicken

What's The Big Idea?

Delightfully simple dish, which can be cooked on the barbecue, in the oven or under the grill. Serve with couscous or rice and a green salad.

Shopping List

Here's the list of what you need:

  • 2 teaspoons caraway seeds
  • 1½ teaspoons ground coriander
  • ¾ teaspoon harissa
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • 4 chicken pieces (breasts, thighs, drumsticks)

What To Do

  • Grind the caraway seeds with a mortar and pestle until finely ground
  • Pour them into a small bowl along with the coriander, harissa, garlic and salt
  • Mix well, and then rub the mixture into the chicken. Set aside to marinate for 30 minutes
  • Pre-heat the grill or barbecue to medium-high
  • Grill or barbecue, turning once, for about 6-8 minutes per side. Check the chicken is thoroughly cooked before serving on a bed of couscous
