Colombian Avocado Soup:
Crema de Aguacate

What's The Big Idea?

This creamy soup apparently originates from the Pacific coastal region of Colombia. It's tasty and simple to make, so it gets a big "thumbs up" from us!
For a slightly more substantial version, you could add some cooked prawns, crab meat or other seafood after the "blending" stage.

Shopping List

Here's the list of what you need:

  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1 litre chicken stock
  • 2 teaspoons lime juice
  • 2 ripe avocados, peeled and mashed
  • 500ml double cream
  • ½ teaspoon ground cumin
  • Plenty of salt and pepper
  • 3-4 tablespoons fresh coriander (cilantro), chopped
  • Optional seafood extras (see above)

What To Do

  • Heat the butter in a large saucepan over medium heat
  • Add the onion and fry for about 3 minutes. Add the garlic and cook for about 30 seconds more
  • Add the chicken stock, lime juice and avocados and bring to the boil. Reduce the heat to medium and cook for about 7 minutes
  • Transfer the soup to a blender and blend until smooth
  • Return the soup to the saucepan. Add the cream, cumin, salt and pepper, and seafood if using
  • Warm through over a medium heat for about 5 minutes
  • Serve warm, sprinkled with fresh coriander (cilantro)
