Denver Baked Omelette

What's the big idea?

Omelettes seem to be popular in Denver - no idea why, but this recipe has turned into something of a regional classic, and it's tasty and simple, so give it a go!

Shopping List

Here's the list of what you need:

  • 2 tablespoons butter
  • 2 spring onions, very finely chopped
  • ½ green bell pepper, finely chopped
  • 4oz chopped ham
  • 8 eggs
  • 60ml milk
  • 2oz grated cheddar cheese
  • Salt & black pepper to taste

What To Do

  • Preheat the oven to 400F/200C. Grease a 10-inch round baking dish
  • Melt the butter in a large frying pan over a medium heat; fry the onion and bell pepper until softened, about 5 minutes
  • Stir in the ham and continue cooking for a further 5 minutes
  • Beat the eggs and milk together in a large bowl. Stir in the cheddar cheese and the fried ham mixture; season with salt and black pepper
  • Pour into the prepared baking dish
  • Bake in the preheated oven until the eggs are browned and puffy, about 25 minutes. Serve warm, cut into triangles (like a pie)
