Carolina Beef Stew

What's the big idea?

One of those heart warming beef stews, perfect for a cold winter's day!

Shopping List

Here's the list of what you need:

  • 3lb boneless stewing steak, cubed
  • 3 tablespoons vegetable oil
  • Salt and freshly ground black pepper, to taste
  • 3 large carrots, peeled and sliced
  • 2 large potatoes, peeled and cut into 2-inch cubes
  • 3 stalks celery, sliced
  • 2 medium onions, peeled and quartered
  • 1½oz plain flour
  • 2 tablespoons tomato purée
  • 1 tablespoon sugar
  • 235ml dry red wine
  • 2 tablespoons fresh parsley, chopped

What To Do

  • Preheat the oven to 300F/150C
  • Heat the oil in a large frying pan. Fry the beef until browned on all sides. Drain
  • Season the beef with salt and pepper. Place the beef in a large casserole dish with a lid
  • Toss the carrots, potatoes, celery, and onions in the flour, and add to the beef
  • Mix together the tomato purée, sugar, wine and 235ml of water
  • Pour over the beef and vegetables, cover, and bake for 3 to 4 hours
  • Check the seasoning. Serve, garnished with freshly chopped parsley
