American Jambalaya

What's the big idea?

Absolutely without a doubt one of our favourite all-time recipes. Cannot resist going back to the pot to nibble, even after two helpings!
It may not be truly authentic to the New Orleans style Jambalaya, but it's still delicious!

Shopping List

Here's the list of what you need:

  • 5oz chorizo sausage, sliced
  • 1 large onion, peeled and sliced
  • 2 sticks of celery, sliced
  • 8oz chicken or turkey meat, cubed
  • 1 green pepper, deseeded and chopped
  • 1 red pepper, deseeded and chopped
  • 2 cloves of garlic, minced
  • 1 red chilli, finely chopped
  • 2 tablespoons of vegetable oil
  • 2 teaspoons of paprika
  • 1½ pints chicken stock
  • 1 teaspoon mixed herbs
  • 2 bay leaves
  • 8oz large or tiger prawns
  • 11oz long grain rice
  • 1 bunch spring onions, chopped

What To Do

  • Heat the vegetable oil in a large wok. Stir in the paprika, then add the chicken
  • When the chicken is browned on all sides, add the chorizo, onion, peppers, celery, garlic and chilli. Fry for 5 minutes
  • Add the prawns and rice. Fry for 2 minutes, stirring continuously
  • Pour in the chicken stock. Bring to the boil, and reduce heat to simmer
  • Add the mixed herbs and bay leaves. Cover and simmer for 10 minutes, or until the rice is almost cooked
  • Leave to stand for 5-10 minutes to allow more liquid to absorb into the rice
  • Serve at once, garnished with sliced spring onions
