New England Fish Chowder

What's the big idea?

New England is famous for its seafood, and this is a very popular recipe orginating from that region of the USA. This is a great, warming fish soup which is surprisingly filling - great for any USA-themed party in the winter months, be it a football (soccer) match or the Super Bowl, for example.

Shopping List

Here's the list of what you need:

  • 1 medium onion, finely chopped
  • 2 medium carrots, cut into small dice
  • 1 stick of celery, thinly sliced
  • 2 tablespoons of butter
  • 1lb haddock fillets
  • 2 medium potatoes, peeled and diced
  • 1 bay leaf
  • 1 teaspoon salt
  • ¼ teaspoon dried thyme
  • ¼ teaspoon freshly ground black pepper
  • 8fl oz dry white wine
  • 16fl oz milk
  • 1-2 tablespoons chopped fresh parsley

What To Do

  • In a large saucepan over medium heat, melt 1 tablespoon butter
  • Add the onions, carrots and celery, and - stirring occasinally - fry for 5-6 minutes
  • Add the whole fish fillets, potatoes, bay leaf, salt, thyme, pepper, and wine
  • Cover, bring to the boil, reduce the heat and simmer for 15 to 20 minutes, until the fish is cooked
  • Break the fish into chunks. Add the milk and remaining 1 tablespoon of butter; heat through
  • Discard the bay leaf and serve in individual bowls, sprinkled with chopped parsley
