Uruguayan-style Beef & Rice Stew

What's The Big Idea?

Traditional hearty warming winter stew from Uruguay. There's no reason why chicken or another meat couldn't be used, but beef is very definitely the tradition.

Shopping List

Here's the list of what you need:

  • 1lb cubed stewing beef
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4-6oz bacon, chopped
  • 2 cloves garlic, minced
  • 2 x 400g tins chopped tomatoes
  • 2 medium potatoes, peeled and cut into 1 inch cubes
  • 2 carrots, peeled and sliced
  • 6oz rice
  • Salt and pepper to taste

What To Do

  • Heat the oil in a large flame-proof casserole and fry the beef until just browned on all sides
  • Add the bacon, onion and garlic and fry for a further 5 minutes
  • Add the remaining ingredients. Reduce the heat and simmer until the rice is cooked
  • You may need to add more water as the rice cooks, but the aim should be for most of the liquid to be absorbed
