Bahraini Sweet and Sticky Pancakes

What's The Big Idea?

Sweet pancakes are popular throughout the Arab world; this fairly typical recipe comes from Bahrain.

Shopping List

For the Pancakes:

  • 4oz plain white flour
  • 2oz butter, plus extra for frying
  • 2 eggs, beaten
  • ½ pint warm milk
  • 1 tablespoon sugar
  • 2-3 drops vanilla essence
For the filling:
  • 8oz chopped nuts
  • 2 tablespoons brown sugar
  • ½ teaspoon ground green cardamom
  • ½ teaspoon grated nutmeg
For the syrup:
  • 150ml golden syrup
  • 50ml honey
  • 2 tablespoons lemon juice

What To Do

  • Sift the flour into a bowl and mix in the butter, eggs, warm milk, sugar and vanilla. Mix well and set aside for 10 minutes
  • Meanwhile, in a separate bowl mix together the ingredients for the filling
  • Add a little butter to a very hot frying pan
  • Pour in enough batter to form a thin pancake. Cook until it is set, flip it over and cook the other side briefly
  • Turn it out onto a plate, and spoon some filling into the middle. Fold the pancake in half, and pinch the edges together
  • Set aside and keep warm. Repeat with the remaining pancake batter and filling
  • Heat the syrup, honey and lemon juice in a pan
  • Place the pancakes on serving plates, and pour the syrup over the top of them. Serve at once
