Chinese Egg-Fried Rice

What's The Big Idea?

Classic accompaniement to many a Chinese meal. Actually, it could be a meal on its own. Simple and tasty. Top tip - make sure the rice is properly cooked and cooled before frying, to reduce the chances of it sticking.

Shopping List

Here's the list of what you need:

  • 7oz long-grain rice
  • 1 egg
  • 2 teaspoons sesame oil
  • 2 tablespoons vegetable oil
  • 4oz frozen peas, defrosted
  • 4 spring onions, finely chopped
  • 4oz beansprouts
  • 2 teaspoons soy sauce
  • Ground white pepper

What To Do

  • Cook the rice, drain well, rinse and set aside to cool thoroughly
  • Beat together the egg and sesame oil, and set aside
  • Heat the vegetable oil in a wok. When it's hot, add the rice and stir-fry for about 3-4 minutes until completely heated through
  • Add the peas, spring onions and beansprouts
  • Stir-fry, ensuring the rice does not stick, for about 3 minutes
  • Season well with soy sauce and pepper, then push to one side of the wok
  • Pour the beaten egg mixture into the other side and leave for about 15 seconds so it begins to set
  • Mix the egg in with the rice. Stir-fry for a further minute and serve straight away
