Chinese Spicy Stir-fried Prawns

What's The Big Idea?

This dish has everything - prawns, noodles, vegetables and a nice spicy kick! Needs no extra accompaniemnt, so can be served on its own, or you can make it part of a larger Chinese-themed buffet meal.

Shopping List

Here's the list of what you need:

  • 4 portions medium egg noodles
  • 2 tablespoons sesame oil, plus a little extra
  • 2 red chillies (de-seeded if you want to reduce the heat), finely chopped
  • 2 teaspoons very finely chopped fresh ginger
  • 3 garlic cloves, finely chopped
  • 1 red pepper, de-seeded and thinly sliced
  • 1 bunch of spring onions, thinly sliced
  • 14oz raw tiger prawns, shelled, cleaned and de-veined
  • 2 heads of pak choi, shredded
  • Juice of 1 lime
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet chilli sauce
  • 3½fl oz Chinese rice wine or dry sherry

What To Do

  • Cook the noodles according to the instructions on the packet
  • Drain and toss in a little sesame oil to prevent them from sticking together
  • Heat the remaining sesame oil in a wok
  • When the oil is hot add the chillies, ginger and garlic. Stir-fry for 30 seconds and then add the red pepper, spring onions and prawns
  • Stir fry for a further 3-4 minutes until the prawns have turned pink
  • Add the shredded pak choi, noodles, lime juice, soy sauce, sweet chilli sauce and rice wine or sherry
  • Stir-fry until heated through and serve at once
