Malaysian Stir-Fried Broccoli

What's The Big Idea?

Relatively simple stir-fry that can be served as a vegetarian main course, or as an accompaniement to a meat or fish curry.

Simply increase or decrease the quantities shown accordingly.

Shopping List

Here's the list of what you need:

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 2 teaspoons fresh ginger, finely chopped
  • 1 chicken or vegetable stock cube
  • ½ red onion, thinly sliced
  • 1 teaspoon dark brown sugar
  • Salt and pepper
  • 1 large head of broccoli, chopped into bite-sized pieces
  • 1 teaspoon oyster sauce
  • ½ teaspoon corn flour
  • 1 tablespoon rice wine or sherry

What To Do

  • Heat the oil in a wok
  • Add the garlic and ginger and fry for up to five minutes (but do not allow it to burn)
  • Add the crumbled stock cube and onion - fry for 3 minutes
  • Season with salt, pepper and sugar
  • Add the broccoli and stir-fry for a few minutes
  • Add the oyster sauce and about 60ml water
  • Cover and cook for about three minutes
  • Mix the corn flour with a little cold water and stir into the wok
  • Add the sherry or rice wine
  • Continue to stir fry until the broccoli is cooked
