Bosnian Spinach & Cheese Pie - Pita

What's The Big Idea?

This type of pie is very popular in Bosnia-Herzegovina, and a variety of different fillings can be used - meat, meat and potato, cheese, cheese and potato, or spinach and cheese (as detailed below). All have their own names in the native language, but are generally referred to as "pita", which has nothing to do with pita bread - it is the generic term for "pie".

This dish is very similar to an Albanian Spinach Pie recipe, which shouldn't really be surprising, given the proximity of the two countries.

Shopping List

Here's the list of what you need:

  • 1kg fresh spinach, washed and drained
  • 1½ teaspoons salt
  • 1 egg, beaten
  • 120ml sour cream
  • 200g feta cheese, crumbled
  • 100g mild cheddar cheese, grated
  • 2 tablespoons olive oil
  • 1 package filo pastry sheets (thawed)
  • 30ml milk

What To Do

  • Preheat oven to 350F/175C
  • Chop the spinach and put in a large bowl. Add the salt and mix well
  • Leave the spinach for about 10 minutes to allow the salt to draw out the water
  • Drain the spinach by squeezing out any excess liquid
  • Transfer the spinach to a new bowl, and add the egg and half the sour cream. Mix well
  • Mix in the feta and cheddar cheeses
  • Use a little olive oil to grease a deep baking tray or lasagne dish, roughly 9 inches x 12 inches or similar
  • Place one sheet of dough into the baking tray and cut away any excess
  • Brush with a little olive oil
  • Repeat until the dough is 6 or 7 layers thick
  • Add a layer of filling
  • Repeat the above steps until the pie reaches the top of the baking tray or you run out of ingredients, finishing with a layer of pastry
  • Place the pie in the oven, uncovered, and bake for about 45 minutes
  • Blend together the remaining sour cream with 30ml milk. Pour this over the top of the pie, and bake for a further 15 minutes
