Croatian Chicken Stew:

What's The Big Idea?

A straightforward tasty chicken stew. Doesn't take that long to cook, doesn't need anything else with it - as the potatoes and peas are all cooked with the chicken in one pot - and has an unusual flavour thanks to the capers, rosemary and sherry. Give it a go!

Shopping List

Here's the list of what you need:

  • 700g boneless chicken breast, cubed
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 50g prosciutto, ham or bacon, chopped
  • 2 garlic cloves, crushed
  • 3 large tomatoes, chopped
  • 1 tablespoon tomato purée
  • 3 tablespoons sherry
  • 400g new potatoes, peeled and cut in half
  • 1 teaspoon fresh rosemary, chopped
  • 50g capers
  • 300g frozen peas
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper

What To Do

  • Coat the chicken pieces with the flour. In a large saucepan, fry the chicken in the oil for 5 minutes. Remove and set aside
  • Fry the onion gently in the same oil for 5 minutes until softened. Add the prosciutto/ham/bacon and garlic and cook for a further 2 minutes
  • Add the tomatoes, tomato purée and chicken pieces. Pour in the sherry and 200ml water and season with salt and black pepper
  • Bring to the boil, reduce the heat to simmer, add the potatoes and rosemary and simmer for about 20 minutes
  • When the meat and potatoes are almost tender add the capers, peas and more water if needed, and cook for a further 10 minutes
  • Sprinkle with parsley and serve
