Greek Roast Lamb

What's The Big Idea?

Kleftiko is a classic Greek dish, extremely tasty and not difficult to prepare. The smell of the slow roasting lamb and herbs will fill your house, so when your guests arrive they will be welcomed by the aroma of some great food to look forward to! Needless to say, there are many regional variations on the dish, but this one seems fairly "typical".

Shopping List

Here's the list of what you need:

  • 1½kg lamb shank
  • 3 medium onions, sliced
  • 4 large potatoes, scrubbed but not peeled, and cut into 1cm thick slices
  • 4 teaspoons olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon thyme
  • 2 teaspoons dried mint
  • 3 cloves garlic, minced
  • 4 bay leaves
  • 2 small sprigs of rosemary
  • 150ml white wine
  • Juice of 1 lemon

What To Do

  • Pre-heat the oven to 120C/250F
  • Cut the lamb into 6-8 manageable pieces (or use lamb chops)
  • Arrange the sliced potato and onion on the bottom and around the sides of a large casserole. Drizzle 2 teaspoons of olive oil over these
  • Place the lamb on top and drizzle 2 more teaspoons of olive oil over it
  • Season with salt, freshly ground black pepper, oregano, thyme, mint and garlic
  • Add the bay leaves and rosemary, and pour over the lemon juice and wine
  • Cover and bake in the oven for 4-5 hours
