Irish Seafood Pie

What's the big idea?

Seafood in Ireland is both extremely popular and of a very high quality. This delicious seafood pie with a topping of mashed potatoes is both tasty and filling. All it needs is a side serving of a green vegetable such as broccoli.

Shopping List

Here's the list of what you need:

  • 2¼lb potatoes, peeled and chopped
  • 8oz cod fillets
  • 8oz salmon fillets
  • 8oz smoked cod or haddock
  • 5oz cooked king prawns
  • 1 pint milk
  • 2 bay leaves
  • 4-6 peppercorns
  • 4oz butter
  • 2oz plain flour
  • 4fl oz white wine
  • 1lb fresh spinach
  • Salt and freshly ground black pepper
  • Pinch of nutmeg
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh parsley, finely chopped

What To Do

  • Preheat the oven to 180C/350F/Gas 4
  • Boil the potatoes in salted water until tender
  • Place all of the fish in a large casserole with the milk, bay leaves and peppercorns, and put into the oven
  • Cook the fish for 10 minutes, then leave to cool
  • Sieve the milk from the fish, reserving it for the sauce
  • In a new pan melt ½ the butter and then stir in the flour
  • Add the wine, and then pour in the milk from the fish little by little, whisking constantly until all the milk is mixed in
  • Add the spinach a handful at a time
  • Add the salt and pepper to taste and then add the lemon juice and zest and nutmeg
  • Remove any bones from the fish and flake into small pieces
  • Gently mix the fish with the prawns into the sauce
  • Taste and add more lemon juice or salt and pepper as necessary
  • Pour into an ovenproof casserole dish
  • Mash the potatoes very well with the rest of the butter and a little milk
  • Stir in the parsley and arrange neatly on top of the fish
  • Cook in the oven for 30-35 minutes
