Portugal's Traditional Soup - Caldo Verde

What's the big idea?

Caldo Verde is a popular Portuguese soup that is often served as a starter at parties and celebrations. There are of course many regional variations, but all versions of this warming Portuguese soup contain potatoes, garlic, kale and water or stock. Most add onion, bay leaves and/or smoked paprika, and many also add slices of chouriço sausage.

Serve with warm crusty bread. Enjoy!

Shopping List

Here's the list of what you need:

  • 4 tablespoons olive oil
  • 2 medium onions, finely chopped
  • 4 cloves garlic, crushed
  • 1 chouriço sausage*, cut into small chunks or sliced
  • 6 large potatoes, peeled and cut into 1cm dice
  • 1.5 litres vegetable or chicken stock
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste
  • Large bunch of kale, finely chopped
  • Smoked paprika and olive oil, for dressing
*Use Spanish chorizo if you cannot get hold of chouriço sausage

What To Do

  • In a large flame-proof casserole, heat the oil and fry the onions for five minutes
  • Add the garlic and chouriço to the onion - fry for a further 2-3 minutes
  • Add the diced potatoes, stir well for a couple of minutes, and then add the stock and bay leaves
  • Bring to the boil, reduce the heat, season to taste and simmer until the potatoes are soft
  • Blanch the kale in boiling water for one minute to take away any bitterness, drain, then add to the soup
  • Simmer for a few minutes, then ladle into individual bowls
  • Mix the smoked paprika with some olive oil to make a dressing, and swirl this into the green soup
