Portuguese Grilled Sardines - Sardinhas Assadas

What's the big idea?

Fish and seafood are central to Portuguese cuisine, and have been for centuries. If you walk down almost any street in Portugal in the summer you will catch the aroma of sardines, prawns and squid being grilled or barbecued. Sometimes the best things are ths simple ones, and this recipe certainly proves the point. Nothing could be simpler or tastier - a fresh sardine barbecued in the summer sun, a chunk of crusty home-made bread, a little green salad and an ice cold beer. It's what summer was invented for! And on top of that, sardines are extremely healthy!

Shopping List

Here's the list of what you need:

  • Fresh sardines - as many as you need, gutted
  • Sea salt flakes
  • Olive oil

What To Do

  • Rinse the sardines and remove the scales, then sprinkle liberally with the sea salt and leave in the refrigerator for at least 1 hour
  • Preheat the grill or barbecue so that it's nice and hot
  • Rinse the sardines and then pat them dry them with paper towels
  • Brush the sardines with a little olive oil and then grill for several minutes each side until they are cooked
  • Serve immediately drizzled with a little olive oil, and a sprinkle of sea salt
