Russian Chicken Ptichki

What's The Big Idea?

Breaded chicken kebabs, baked in the oven with fresh vegetables. All you need to serve is some fresh crusty bread, or jacket potatoes.

Shopping List

Here's the list of what you need:

  • 1½lb boneless skinless chicken breasts, cut into 1 inch cubes
  • 2 small onions, roughly chopped
  • 1 clove garlic
  • Salt and black pepper to taste
  • 1 egg, lightly beaten
  • 1 slice stale bread, made into breadcrumbs
  • 4 tablespoons vegetable oil
  • 2 celery stalks, coarsely chopped
  • 2 medium carrots, coarsely chopped
  • Short wooden or bamboo skewers

What To Do

  • Purée the garlic and half the onion in a food processor until fairly smooth
  • Mix in a suitable bowl with the chicken, salt and pepper. Cover and refrigerate at least 2 hours (and up to 6 hours)
  • Thread the chicken onto skewers. Pour the beaten egg into a shallow dish. Put bread crumbs in another shallow dish
  • Dip the chicken kebabs in the egg, and then roll in bread crumbs. Set aside
  • Preheat the oven to 375F / 190C
  • Heat the vegetable oil in a large deep frying pan or wok and fry the chicken skewers a few at a time until the outside is deep golden brown
  • Place the celery, carrots and remaining onion in the bottom of a medium sized shallow casserole dish
  • Prop the chicken skewers up as well as you can against the side of the casserole, then cover
  • Bake for 15 minutes, then reduce the oven to 350F / 175C, and bake for a further 45 minutes
