Slovenian Mushroom Goulash

What's The Big Idea?

Mushrooms play a big part in Slovenian cuisine. This vegetarian goulash is delicious with wild rice, although pasta or potato dumplings are probably a more traditional Slovenian option.

Shopping List

Here's the list of what you need:

  • 3 tablespoons of butter
  • 3 medium onions, finely chopped
  • 2 tablespoons lemon juice
  • 1kg mushrooms, coarsely chopped*
  • 2 cloves of garlic, chopped
  • 100 ml vegetable stock
  • 3 small potatoes, peeled and cubed
  • 1 bay leaf
  • 1 tablespoon ground cumin
  • 2 tablespoons tomato purée
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Sour cream to serve
* If possible oyster mushrooms work really well, but any mushrooms are good!

What To Do

  • Melt 2 tablespoons of butter in a large frying pan, and add the lemon juice and onions
  • Fry for five minutes, then add the mushrooms and garlic
  • Cover and simmer over low heat for 10 minutes
  • Add the stock, potatoes, bay leaf, cumin and tomato purée; cover and cook for about 15 minutes, or until the potatoes are tender
  • In a separate small saucepan, heat the paprika with the remaining butter; blend into the goulash
  • Season with salt and pepper and serve with rice or pasta, and a dollop of sour cream
