Slovenian Turkey Fillets with Gorgonzola

What's The Big Idea?

Although Slovenia has very much its own style of cooking, many ingredients are borrowed from its near neighbours. This recipe is typical in that respect, using Italian Gorgonzola as the main ingredient in the cheesy sauce. There's plenty of butter, cheese and cream in this recipe, so not one for the dieters!

Shopping List

Here's the list of what you need:

  • 4 large turkey breast fillets
  • 3 tablespoons plain flour
  • 4 tablespoons butter
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 8oz Gorgonzola cheese, crumbled
  • 200ml double cream
  • Salt and white pepper or to taste
  • 2 tablespoons chopped fresh parsley

What To Do

  • Pound the turkey fillets until they are about ¼ inch thick. Season with salt and pepper
  • Coat the turkey fillets in the flour, and set aside for 5 minutes before cooking
  • In a large frying pan, melt 2 tablespoons butter. Add the oil and the garlic and cook for 1 minute over a low heat
  • Increase the heat to medium and fry the turkey fillets until golden brown on both sides and cooked through, about 10-12 minutes
  • Meanwhile, make the Gorgonzola sauce. In a small saucepan, melt 2 tablespoons butter. Add the cheese and cream
  • Cook over a low heat, stirring occasionally, for 3 to 4 minutes or until the cheese has melted. Season with white pepper
  • Ladle a portion of sauce onto a warmed plate and place a turkey fillet on top. Garnish with chopped parsley
