Spanish Chicken & Chorizo Casserole

What's the big idea?

Simple, classic casserole of chicken and tomatoes. Because of the inclusion of paprika and chorizo it develops quite a smokey flavour.
I like to add the black olives, but some people don't like them, so I have marked them as an "optional" ingredient.

Shopping List

Here's the list of what you need:

  • 4 large chicken breasts, each cut into three roughly equal pieces
  • ½ - 1 (depending on your taste) chorizo sausage, thinly sliced
  • 100ml white wine
  • 2 tablespoons olive oil
  • 12 pitted black olives, halved (optional)
  • 1 small onion, sliced
  • 1 x 400g tin chopped tomatoes
  • 1 tablespoon paprika
  • 250ml chicken stock
  • 1 tin cannelini beans
  • 4 bay leaves
  • Salt & freshly ground black pepper

What To Do

  • In a large casserole that is able to be used on the hob, heat the oil
  • Fry the onion until translucent, then add the chorizo and chicken. Fry until browned all over
  • Add the white wine, chopped tomatoes, paprika, bay leaves and chicken stock
  • Bring to the boil, reduce the heat, cover and simmer for half an hour
  • Add the olives, beans and seasoning to taste. Cook for a further 10 minutes
  • Serve with rice or mashed potato and green vegetables
