What's The Big Idea?

Anchovies are one of Turkey's favourite fish, and this classic dish combines them with rice, fruit and spices in a delicious one-pot meal.

Shopping List

Here's the list of what you need:

  • 250g long grain rice
  • 2 teaspoons salt
  • 1 medium onion, finely chopped
  • 120ml olive oil, plus 2 tablespoons
  • 50g pine nuts
  • 2oz sultanas
  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon dried thyme
  • 1 tablespoon freshly chopped mint
  • Salt and black pepper
  • 900g anchovy fillets

What To Do

  • Preheat the oven to 200C, 400F, Gas Mark 6
  • Place the rice in a large mixing bowl and cover with boiling water. Add 2 teaspoons of salt, stir well and set side cool
  • Meanwhile place the chopped onions in a large saucepan with 60ml of water, bring to the boil then reduce the heat and simmer for 10 minutes
  • Add 120ml olive oil and continue to simmer for a further 5 minutes
  • Drain the rice well, add to the saucepan, bring to the boil then reduce the heat. Simmer, stirring constantly, for 5 minutes
  • Add the sultanas, pine nuts, sugar, cinnamon, thyme, mint and 350ml boiling water to the saucepan
  • Stir well, reduce the heat, cover, and simmer for 10 minutes
  • Meanwhile grease an ovenproof casserole and line the base and sides with about two thirds of the anchovy fillets, skin side down
  • Pour the rice mixture into the centre and then cover the surface with the remainder of the anchovies, skin side up
  • Sprinkle with a little olive oil and bake for 30-40 minutes
