Turkish Minced Meat with Eggs:

What's The Big Idea?

Spiced minced lamb or mutton, topped with fried eggs. Pretty much pure protein, so serve with rice and vegetable side dishes and relishes.

Shopping List

Here's the list of what you need:

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large onion, very finely chopped
  • 500g mutton or lamb, minced
  • 200g tomatoes, chopped
  • 1 tablespoon fresh coriander, chopped
  • ½ teaspoon ground cinnamon
  • ½ teaspoon paprika
  • ½ teaspoon ground white pepper
  • 4 eggs
For the spice mix:
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • ½ teaspoon chilli powder

What To Do

  • Heat the oil in a large frying pan and fry the garlic for 1 minute
  • Add the onions and continue frying for a further 10 minutes
  • Meanwhile, mix together the ingredients for the spice mix with enough water to make a paste
  • Add the spice paste to the pan, and stir fry for 2 minutes
  • Add the minced meat, and continue to fry, stirring frequently, for a further 10 minutes
  • Add the tomatoes and remaining herbs and spices, and simmer for a further 15 minutes, stirring occasionally
  • Flatten down the meat mixture with a fish slice or similar. Break four egss over the meat, and continue cooking until the eggs are cooked to your liking*
* It may be necessary to finish the eggs off under a grill.
